Since opening in 2017, Provender Kitchen and Bar has made a strong reputation throughout the greater Ellsworth community. Provender is known for offering a variety of amazing dinner plates that patrons flock to weekly. The menu revolves around availability and changes frequently, but Provender is sure to never disappoint.
At the end of February, Chef Daron Goldstein is planning on shaking up his restaurant by adding in a lunch time offering. But this lunch will be a slightly different compared with Provender’s dining experience.
“It’s almost like two concepts under one roof. It’ll be new and different but still Provender food,” explained Goldstein. “Dual concept places exist in Asia and Europe, it’s not something new but uncommon in America. We’re bringing a modern feel to the area and for the restaurant as well.”
The new lunch experience will be a quick service, or “fast casual” as Goldstein refers to it and will center around new sandwich offerings from the restaurant. “We started adding sandwiches to the dinner menu, a different smash burger, a different hand-held sandwich, and they became wildly popular. Just last night we had countless sandwiches fly out of here,” said Goldstein. “I’m happy we’re creating something people really enjoy.”
Using these new sandwiches, Goldstein has created a new core lunch menu consisting of three different burgers, three different hot sandwiches, and three different cold sandwiches. It’s being dubbed the Little PKB Sandwich Club. “We won’t be pouring drinks, but we will have canned cocktails, canned beer, and three nonalcoholic lemonades as well as desserts,” said Goldstein.
“We’re looking to catch the crowd for people eating quick for lunch. People will come in, order, take a number, and food will be brought to them as it is prepared,” said Goldstein. This will reduce the cost of labor as well as alleviate the challenges that come with scheduling.
Right now, the restaurant is preparing for opening for lunch at the end of the month by testing recipes and performing mock lunch days to work out the kinks before opening day. “I’m looking forward to it and making ourselves more available for the community and bring back lunch to Provender,” said Goldstein.
