A pair of Maine chefs and brewers are set to open a pop-up ramen and dumpling restaurant in Veazie next month.
The Broth Alchemist, run by the husband and wife duo of Justin and Jess Amaral, will serve up Japanese-style ramen on Wednesdays, alongside an array of handmade dumplings, according to a Facebook post from the restaurant. They’ll be at 1492 State St. in Veazie, the restaurant incubator that for the past three years has hosted a wide array of chefs and home cooks, and they plan to start serving food sometime in December.
The Amarals own and operate Sidereal Farm Brewery and Maillard Kitchen, a restaurant and farm brewery in Vassalboro, where they have for the past few years been serving their ramens, burgers, pastas, baked goods and other menu items alongside their beer, wine and mead. Maillard Kitchen regularly does collaborations with breweries and farms across Maine and New Hampshire, in addition to its regular in-house menu in Vassalboro.
As the pair notes on its Facebook page, they use “traditional techniques infused with modern ingredients” for both their ramen and dumplings. They let their broths simmer for between 48 and 72 hours, and use fresh, local ingredients.
Other pop-ups at 1492 State St. include Al Shamee, a Middle Eastern restaurant, open on Fridays; Galindo’s, an Ecuadorian restaurant open on Saturdays; and Torrey’s Muffins and Cookies, which makes baked goods and serves brunch and breakfast on Sunday mornings.
The restaurant incubator is operated by Changsu Kristopher Lee, who since 2021 has offered small-time cooks and would-be restaurateurs a chance to operate a small business out of the shared kitchen and dining room in the building. Lee also has his own pop-up, Korean Dad, serving Korean food.
